Sleep. Obviously. But since you can't gift that, the next best thing is making the day easier.
Think about what a new-parent day looks like. One hand is usually busy. Meals happen standing up, or not at all. Every surface is covered in tiny laundry. So the gifts that land are the ones that fit into that mess instead of adding to it.

Something sweet they can grab without thinking

The best line I know is some version of "No need to respond. Just eat the cookies." It takes the pressure off. Other options: "Thinking of you both," or "We're so happy for you. Rest when you can."
And skip the advice. They've gotten plenty. Nobody has ever opened a gift and thought, "I'm so glad this came with sleep tips."
When is the best time to send a gift?
You can send something before the baby arrives, but I like the first few weeks after the birth better. That's when the visitors start to taper off and the quiet sets in.
Here's my take: a gift that shows up after the initial rush says "I'm still thinking about you." That can mean a lot more than the fifth bouquet in week one.
